Modern Ukrainian cuisine

Modern Ukrainian cuisine
«Taste Through Time» is a project about seeking an answer: what exactly makes a dish—one that didn't even exist yesterday—Ukrainian. Modern Ukrainian cuisine is taking shape today, and its foundation is not merely a list of new recipes, but a multifaceted system.

Patterns in ingredients, techniques, and flavor profiles make it possible to create something new while preserving a recognizably national character. To grasp them, one must study the logic of flavors, analyze recurring approaches, and identify connections.

To achieve this, a strong team was assembled and provided with an environment where knowledge, skills, and technologies work toward a shared goal: exploring Ukrainian flavors, testing hypotheses in practice, and transforming observations and discoveries into a clearly defined principle. This principle will serve as a foundation for anyone striving to shape Ukrainian cuisine and enrich it with new dishes.

Manifesto

Manifesto

Traditional Ukrainian cuisine already has a history of its own—comprising dishes, recipes, and techniques passed down through generations. We know, love, and honor it. Yet, all of this represents the experience of the past, preserved in a specific set of forms. And for that reason, it is limited.
If modern Ukrainian cuisine were built solely around these forms, we would remain forever confined within a predetermined framework. It is therefore more interesting to look not at the dishes themselves, but at what defines them. Modern Ukrainian cuisine is taking shape today, and its foundation is not a list of new recipes, but a multifaceted system of principles.
Today, as attempts are made to destroy our identity, we must define the kind of Ukrainian tomorrow we envision. Let us shape Ukrainian cuisine together—creating a cuisine that can evolve and become trendy while remaining unmistakably Ukrainian.
To carry the Ukrainian taste—through time.
